In the kitchen with Pasquina: the authentic flavours of Romagna

Pasquina is a fine example of a typical mamma from Romagna …she rules the kitchen at Hotel LaMorosa with an iron fist! Under her watchful eye the pantry and fridge are stocked with only the finest products Romagna has to offer: fresh fish, quality meat, local cheese and salami, fruit and vegetables from the garden. Like any mamma from our region, Pasquina loves to pamper and surprise her guests with scores of recipes, all prepared according to tradition and using quality ingredients. Hand made pasta, home made sweets and bread… at LaMorosa great food is a pleasure you can count on.

 

I’ll let you in on a secret…

“Always use fresh calamari for a crunchy seafood fry. Clean the calamari and leave them to dry. Beat an egg white for a few seconds with a fork, then dunk the calamari and flour them lightly. Remove any excess flour and fry them in boiling oil in a high, narrow pan."
